I’m a Food TV person. I watch almost anything food related although I tend to steer clear of the baking shows because I’m not into desserts at all – If they’re making Bread I’ll watch, but cakes – Byebye.
So I was killing some time watching a show on Best Foods in the US or something similar (Unique Eats it was called), and up pops Rick Bayless’s Xoco in Chicago profiling his Tortas, they show his Ahogada Torta, which looks incredible… I mean incredible. It’s made with a crispy French bread style bun, pulled pork, black beans, pickled onions served in a spicy arbol chile sauce and tomato broth.
As is usual, I get a little obsessed over these rolls, so today I go out and buy a slab of Pork & 2 tins of black beans. The Pork is now slow cooking in a tomato, onion, garlic, & chili sauce, and will be combined with the homemade French bread for dinner tomorrow.

Making this has been a bit of a revelation for me. I used to think I had an obsession with Pizza, well I do, but now I know it’s not just Pizza, it’s actually any combo of dough and savory food. Veggie Perogie – Yep, Chicko Roll Yep, Hamburger – Yes please, Hot Dog – yep, how about a Pork Bun, Bahn Mi, or Philly Cheesesteak, Yep Yep & Yep.
I’ve only just made the connection now and I’m not sure where this will lead – Probably a lot of sandwich recipes will follow…. mmm sandwiches. Here is a bread roll I made for this recipe in honor of this revelation.

I’ve made pickled onions as well. Just sayin. About the only thing I haven’t done is generate the electricity, design the oven, breed the pork and butcher it, and grow wheat to make the flour for the bread or sow my own onions. This is TOTALLY “Home Made” people!

In the end, I made the bread, pickled onions, and slow cooked the pork in the tomato/onion mix. I then grilled (broiled) the bread/Pork/Onion combo with some tasty cheddar cheese. Was it good? Yep Yep Yep.
