I like Mushrooms, but my better half doesn’t like the texture (the flavour is OK). So I was surprised when she brought home a 4 pack of flat mushrooms yesterday. The thing is, as we are on a low cal diet and Mushrooms are really low in calories – 38 calories per 100 grams low. So I would eat then quite a lot. This Low calorie Mushroom Goulash is incredibly low in calories. Served with 85 grams of cooked rice and the yoghurt, the calories count is under 200 per serve..
So we have some Mushrooms, and I’m next on cooking duty, scouring the internet for low calorie mushroom recipes. I came across this blog, http://www.london-unattached.com/topics/recipes/5-2-diet-recipes/ which appears to have quite few 5:2 diet recipes, so I’ve bookmarked his site, and will have a better look round over the next few days/weeks. I would have made his Stroganoff, but opted for the Goulash as I didn’t have the Lentils. Stroganoff will be on the menu some time soon I suspect.
Here is his recipe, I didn’t have the caraway seeds, so omitted those.
Low Calorie Mushroom Goulash
Ingredients – Serves 2.
1 can Chopped Tomatoes
2 Banana Shallots
2 stalks Celery
1 heaped teaspoon Smoked Sweet Paprika
4-5 shots 1cal oil spray
2 teaspoons Low Fat Creme Fraiche
1 handful Fresh Parsley
2 cloves Garlic
1 teaspoon Caraway Seeds
1 Pinch Chilli flakes
Slice the mushrooms into thickish slices, trimming off any woody stems.
Finely dice the shallot and garlic. Spray a heavy pan with 1cal and gently soften the shallot and garlic over a low heat for 5 minutes.
Slice the celery into 1cm lengths and add to the pan. Cook for a further 5 minutes over a low heat
Add the caraway seed, paprika and chilli to the pan and cook for 1 minute more
Now add the mushrooms and cook for 2-3 minutes, stirring constantly.
Finally add the tinned tomatoes and cook for 15 minutes so that the mixture reduces down and thickens. Adjust the seasoning to taste.
Garnish with fresh chopped parsley and low fat crème fraiche/low cal Yoghurt.
Serve with Rice.
