I had some really great kale chips at a restaurant some time ago, and I have made them myself since. I was surprised at the earthy flavour the Kale had, it worked wonderfully with the garlic.
We had some in the fridge that needed to be cooked or trashed. Also in the fridge were 3 lonely defrosted chicken thighs that weren’t going to be enough for a full on meal. That’s where this recipe came from. In my mind, the Kale would be the crispy crunchy exterior of a garlic, chili, and lime marinated chicken bite. In reality, the Kale browned up alright, and would have been crispy if it weren’t for the juice that came out of the chicken bites during the cooking process, so the crispy exterior went out the window. The flavour combination of garlic, lime and chili with the kale was great.
The recipe follows, but it’s so simple it not really a recipe.
Bunch of Kale.
500 grams of Chicken thighs
Juice of 2 limes + additional lime for serving
1 – 2 teaspoons of dried chili flakes
2 – 3 garlic cloves, minced
Cooking oil spray
Remove the tough stems from the Kale, and cut into 5 cm lengths
Mix the Lime juice, garlic and dried chili flakes in a bowl as a marinade
Cut the thighs into bite sized pieces, and add to the lime juice mixture and marinate for 20 minutes to 1 hour.
Remove the chicken from the marinade, dry on kitchen paper, and wrap in the Kale leaf.
Place seam side down in on a baking tray lined with parchment, and spray with cooking oil.
Bake in a preheated hot oven (220C) for 10 minutes, turning once. Keep and eye on these as the Kale will burn.
Serve with lime wedges.
