Turkey Caesar salad, just like chicken Caesar, but with the slightly lower calorie Turkey for the protein. In this recipe, I’ve also managed to cram in croutons, poached eggs, and Bacon (yes Bacon on a low calorie day – knock me down with a feather).  This meal adds up to about 370 calories per serve. This dish delivers a full plate of food, full of flavour. The dressing is particularly pleasing using only low fat yogurt, olive oil, freshly squeezed lemon juice and freshly crushed garlic.  Everything in this dish is designed to maximise flavour, the turkey breast is grilled on the BBQ, the bacon is fried over a low heat to render the fat and allow it to get crispy, while the croutons are fried up in the bacon fat – In fact, once the bacon was cooked, I removed it from the pan, and added some water to loosen up the bacon fond, and stirred the croutons in it. I then crisped up the croutons later under the broiler. The eggs are free range, and very fresh. A fresh egg is your friend when poaching. The cheese is Parmesan, and freshly shaved, not pre-shaved cheese. Sea Salt and freshly ground black pepper re the seasonings.

 Ingredients: (Serves 2)

270 grams skinless Turkey breast
olive oil spray
1 thick slice good-quality bread (approx 50 grams), crusts removed, cut into 1cm cubes
1/4 cup (60ml) lemon juice
2 garlic cloves, crushed
1 teaspoon olive oil
2 slices thin bacon (50 grams)
1/2 cup (125g) low-fat natural yoghurt
30 grams shaved Parmesan to garnish
2 baby cos lettuce, washed, dried
2 medium eggs poached
salt and pepper to taste

Method:

Cook the bacon in a frying pan over a low heat, this allows the fat to render out. I added the croutons to the same pan, so they soak up the bacon fat, and then crisp up the croutons under the broiler/grill prior to serving.
Spray the turkey with oil, and season with salt and pepper – cook on the BBQ
Poach the eggs to a runny center,
Mix the crushed garlic, lemon juice, oil, and yogurt together (shake in a jar)
Shave the Parmesan cheese.
Assemble by layering the lettuce, then sliced Turkey breast, croutons, Bacon, top with the poached egg, and pour on the dressing.
