There are almost as many recipes for Chicken wings out there as there are chickens. These wings are simply coated in a flour seasoning mix, and baked in a hot oven for 40 minutes until crisp.
I usually deep fry my wings, but I’m trying to lose this spare wheel around my waist so today I’m opting for oven baked. I don’t for a second consider these healthy, but they are slightly less sinful than the deep fried ones.
We’re off to a friends house to catch up with a visiting mutual friend and are bringing these wings along as part of our nibbles contribution. While it’s not a competition in the formal sense (no voting) the hosts hubby always prepares something special in the snack dept. so I try not to be outdone. He’ll probably be doing New Zealand Green Lipped Mussel’s 3 ways, and I’ll bring the chicken wings and grilled cocktail franks wrapped in bacon(see below). Snap!
These wings are so easy to make, particularly since I cheated on the seasoning by using Chef Paul Prudhomme’s Poultry Magic Seasoning Blend,
but you can use your preferred seasoning mix. The secret is to add some extra chilli powder and black pepper to the seasoning mix and mix in an equal amount of cornflour. Put it all into a bag, and shake it to mix, then add washed and dried chicken wings and shake to coat. Put these on a rack over a baking dish, and bake in a hot oven for 40 minutes. These little wings come as crispy as deep fried ones, and are melt in the mouth tender. Don’t take my word for it, look at the pictures.
I’m not making deep fried wings again – these baked wings are kick arse good. What about a sauce you ask? I’m using a good old Kiwi Hot sauce called Kataia Fire. It’s similar to Franks hot sauce in that it’s Hot, and has a strong Vinegar taste. It took a while for me to get into these vinegary Hot sauces, but now I wouldn’t use anything else with Chicken wings. I only dip though, I haven’t progressed to dousing the batch of wings in the stuff as is traditional.
Crispy oven Baked Buffalo Chicken Wings
20 or so chicken Wings
3 heaped tablespoons Cornflour
3 Heaped Tablespoons Chicken seasoning mix
1 tsp freshly ground black pepper
1 tsp chilli powder
cooking oil spray
Pre heat the oven to 250C
Add the dry ingredients to a plastic bag and shake to combine.
Wash and dry the chicken wings and add to the bag. Shake to coat.
Place the wings on a wire rack over a baking tray. Line the tray with parchment paper for easier cleaning
Spray the wings lightly with the cooking spray
Put the wings on the center rack of the oven and cook for 20 minutes. Turn the pieces over and bake for a further 20 minutes, or until cooked. Test a large piece for doneness and eat immediately – don’t burn your mouth like I did.
Serve with your favorite HOT sauce!
