This was my first attempt at a Chicago style Pizza. At the time, I hadn’t been to Chicago (or North America for that matter). I have now, and realise how far from the true article this pizza was. Unfortunately, living about 10,000 miles from the Windy City I have no choice but to make them myself, and as much as mine don’t compare to the real deal, this is still a tasty pie.
Start with a fairly standard pizza dough recipe, oil a deep dish pan, and line it with the pizza dough. Fill with a layer of Mozzarella Cheese , then add the mushrooms, onions, pepperoni, capsicum (Bell Peppers), and cracked black pepper. Top with tomato sauce, another layer of cheese, and just to make it interesting, I add a thin layer of Pizza crust, and some more cheese. Bake in a moderate over for 25-30 minutes. Top with slices of pastrami, and allow to cool for 5 minutes before removing from the pan, and cutting into generous slices.
